🇲🇦 Chicken Tagine
A Moroccan masterpiece — chicken braised with preserved lemon, olives, and warm spices. Fragrant, tender, and perfect with couscous.
🧄 Ingredients
- 8 bone-in chicken thighs
- 1 tsp paprika
- 1 tsp cumin
- ½ tsp ginger
- ½ tsp coriander
- ¼ tsp cinnamon
- 1 lemon (zest + juice)
- 5 garlic cloves, minced
- 1 onion, sliced
- 2 tbsp flour
- 1¾ cups chicken broth
- 2 tbsp honey
- 2 carrots, sliced
- ½ cup green olives
- 2 tbsp chopped cilantro
- Salt & pepper to taste
👨🍳 Instructions
- Brown chicken in oil. Remove skin and set aside.
- Sauté onion, garlic, and spices. Add flour and cook briefly.
- Stir in broth, honey, lemon zest, and juice. Return chicken.
- Simmer 10 min. Add carrots and cook 10 min more.
- Stir in olives and cilantro. Adjust seasoning. Serve with couscous.
