🇳🇿 Hāngī
A traditional Māori method of cooking meat and vegetables underground using heated stones. Smoky, tender, and deeply communal.
🧄 Ingredients
- 2 kg pork shoulder, cubed
- 1 kg chicken pieces
- 1 kg kumara (sweet potato), peeled and chopped
- 1 kg pumpkin, cubed
- 1 cabbage, quartered
- Salt and pepper
- Banana leaves or foil (for wrapping)
- Clean cloth sacks or muslin
- Hot stones and earth pit (for traditional method)
👨🍳 Instructions
- Season meat and vegetables with salt and pepper.
- Wrap each item in banana leaves or foil. Group into cloth sacks.
- Heat stones in a fire pit until red-hot. Line pit with stones.
- Place sacks on stones. Cover with wet cloths, then soil.
- Cook underground for 3–4 hours. Carefully uncover and serve hot.

- Include stuffing or steamed pudding for a full feast.
