Chewy Japanese rice cakes infused with matcha green tea and filled with sweet red bean paste. A delicate gluten-free dessert.
π§ Ingredients
- 6 tbsp mochiko (sweet rice flour)
- 2 tbsp sugar
- Β½ tsp matcha powder
- 6 tbsp water
- ΒΌ cup cornstarch (for dusting)
- Β½ cup red bean paste
π¨βπ³ Instructions
- Mix mochiko, sugar, and matcha. Add water and stir until smooth.
- Microwave 2 minutes. Stir. Microwave 30 more seconds.
- Dust parchment with cornstarch. Transfer dough and divide into 4.
- Flatten each piece, add red bean paste, and seal into balls.
- Dust with cornstarch and serve.
