Thailand’s iconic noodle stir-fry — rice noodles tossed with tamarind sauce, tofu, egg, and peanuts. Sweet, tangy, and utterly craveable.

  1. Soak noodles in hot water until pliable. Drain and rinse.
  2. Mix fish sauce, soy sauce, sugar, and vinegar to make sauce.
  3. Sauté shallot and garlic in oil. Add protein if using.
  4. Push aside, scramble eggs, then mix everything together.
  5. Add noodles and sauce. Toss until coated and heated through.
  6. Stir in bean sprouts and peanuts. Serve with lime wedges.
