Thailand’s iconic noodle stir-fry — rice noodles tossed with tamarind sauce, tofu, egg, and peanuts. Sweet, tangy, and utterly craveable.
🧄 Ingredients
- 4 oz rice noodles
- 2 tbsp peanut oil
- 2 eggs
- 1 cup bean sprouts
- 1 shallot, chopped
- 2 garlic cloves, minced
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- ½ cup roasted peanuts
- 1 lime, cut into wedges
- Optional: tofu, shrimp, or chicken
👨🍳 Instructions
- Soak noodles in hot water until pliable. Drain and rinse.
- Mix fish sauce, soy sauce, sugar, and vinegar to make sauce.
- Sauté shallot and garlic in oil. Add protein if using.
- Push aside, scramble eggs, then mix everything together.
- Add noodles and sauce. Toss until coated and heated through.
- Stir in bean sprouts and peanuts. Serve with lime wedges.

- Use tamarind paste for authentic flavor.
- Top with fresh cilantro or chili flakes for heat.
